Somedays it can be full of wonder and joy and other days it is full of sadness and pain. Unfortunately today is the latter for me. Today my Mom had surgery to remove 1/3 of her colon due to cancer. Me and my Mom have had our up's and downs throughout my life. We are both strong stubborn women and sometimes butt heads. But what do you do or say when the thought of losing your Mom hits you so hard the wind is literally knocked out of you? I thought I was doing a good job of keeping it together until this morning when I showed up to the hospital 30 minutes late. I was being the brave girl everyone expects me to be until I saw my mother in that hospital bed crying and looking weak as water. And then it hit me. What in the earth was I thinking? Why hadn't I run around this morning with a fire under my ass to get to her? What would I do if something happens to my Mom? All I could do was let it out and cry. In spite of all our little ups and downs I love my Mom dearly and am scared to death of losing her. I thank God I made it to the hospital just as they were taking her back to surgery. I had the bright idea of giving Gracie's Pepto-Pink room a makeover. And of course I'm half way there and READY to be done! She loves pink so there was no convincing her to change the color. So we ripped up the brown carpet to expose the hardwood floors. Which are so beautiful! The trim was stained a light oak so I primed and painted all of it linen white. It makes the room look so much brighter. Her bed and dresser are oak so it was just to much wood tones in that pink room. And the best, best, best redo is her new bookcase. It used to be painted bright red and was just sitting in our basement. I used some leftover paint from my son's room and painted it this pretty green color. I've gotta finish painting the doors and it will be complete. Now she has room for all of her books and knick-knacks and it didn't cost me a dime. I want to add some finishing touches to girly it up a bit more and I am DONE! Spread one teaspoon pizza sauce on each slice of bread; top with one tablespoon cheese mixture. Arrange on an ungreaded baking sheet. Bake at 350 degrees for 12-14 minutes, until heated through and cheese is melted. Serves 6. I cringed at the price we paid for our male at a local auction. But he has earned his keep by giving us little babies! There were about 15 in the first hatch and now we're down to 3. They are easy prey when they're that little. The remaining 3 are now "teenagers" as my kids call them and growing very nicely. The second hatch had about 30 and sadly we have 1 chick left. It must either be very lucky or very smart because it hangs in there with the others and is growing every day! The last picture is of our male and he loves to come to the front door and peek in. I think he must see his reflection in the glass because he pecks at the door. I love it! They are the hardest working farm animals, working from sun up to sun down pecking at bugs. My son had to give his country ham speech for 4-H and lucky for us we got to see alot of neat things while there. They were having the dairy animal shows, rabbit show and every kind of bird you can imagine show! The first picture is two sweet dairy cows patiently waiting for their turn in the ring. The pumpkin was the fair winner which weighed like 800 pounds I think. It was a whopper! This bunny was so cute I could have taken it home if it had been for sale. If only my angora rabbits looked that good! And the final picture is of my sweet Gracie lovin' on one of the cows. Look at those sweet eyes. I've decided I need a Guernsey cow just to love on it! We had a really good time although we were exhausted from it all. Okay so one quart isn't much to brag about but hey I'm easily impressed! My jar didn't turn out so cute though. I think because it was an older jar it had residue I couldn't get removed and sooo it ended up cloudy looking. And the stupid maters floated up even though I packed them as tight as I could. Oh well, maybe they'll be picture perfect next time! The mater in the picture is crazy looking! I don't know if they are supposed to be knobby like that or if it's just deformed. We don't spray our veggies so I just cut off the bad places and use them. No sense wastin' a good vegetable! I'm sharing the recipe I used which was sooo super simple! Happy "mater cannin"!</span></div><div><span style="color:#009900;">Canned Tomatoes</span></div><div><span style="color:#009900;">35 to 40 large tomatoes</span></div><div><span style="color:#009900;">1 tsp sugar per quart (optional)</span></div><div><span style="color:#009900;">1 tsp salt per quart (optional)</span></div><div><span style="color:#009900;">2 tbl bottled lemon juice</span></div><div><span style="color:#009900;">Peel tomatoes by dropping then into boiling water for 15 seconds. Immerse in cold water and peel skins off. Core each tomato and leave whole. Put salt, sugar and lemon juice into the jars. You should have plenty of juice to cover the tomatoes by pressing them down. Remove air bubbles and clean the rim of the jars. Seal and process in a water bath canner for 45 minutes. Makes 7 quarts.</span></div><div><span style="color:#009900;"></span> </div><div><span style="color:#cc0000;">I didn't have enough tomatoes to make 7 whole quarts so I just used what tomatoes I had. I love finding things and turning them into something useful. Here are a few pictures of my junk finds turned into garden goodies. The old washstand was just sitting in the basement rusting before I planted it full of flowers. The empty side is waiting for a water pump so I can fill it with water and turn it into a fountain. I bought the old plow for hardly nothing at an auction and now it's in my front flower garden. The old galvanized tub is planted with wildflowers waiting to bloom. The other pots are wildflowers also. The first one is an enamel pot, the second an old rusty pot and the third is an old minnow bucket, I found on the side of the road. We had two Bradford Pear trees to get blowed down by a storm and I had my husband save part of it. I think it looks perfect with the birdhouse my son made me on it. It always so much fun to turn garbage into something useful. My basement is full of treasures waiting for me to gussy it up. We visited some of the most beautiful places. Our first stop was Cades Cove. If you ever want to see wildlife this is the place to go. We weren't lucky enough to see a bear this year but we did see plenty of deer and wild turkey. And breathtaking mountains! Next stop was Roaring Fork and let me tell you I loved it! The waterfalls are everywhere and it is just so peaceful and serene. I could have stayed there all day and watched the water. It was so nice to get away from all the craziness life has been throwing my way lately, but I was glad to get home. This was the first time I have ever made preserves and it turned out wonderful. I had planned to make strawberry, but couldn't resist the box of peaches for $9.00! The first batch turned out okay but I didn't like how chunky the fruit was. So for the next batch I chopped the peaches up finer and was very happy with it's consistency. The following recipe is soooo easy. </span></div><div><span style="color:#33cc00;">1 quart any kind of fruit</span></div><div><span style="color:#33cc00;">1 quart boiling water</span></div><div><span style="color:#33cc00;">4 cups sugar</span></div><div><span style="color:#33cc00;"></span></div><div><span style="color:#33cc00;">Pour boiling water over fruit and drain at once. Put the fruit into pan and add 2 cups sugar. Bring to a boil and cook 5 minutes, stirring often. Add 2 more cups sugar and boil 5 minutes. Take off the stove and pour into jars. Let the mixture cool and freeze. This keeps for a long time in the freezer. Just take out of freezer and put in fridge before using.</span></div><div><span style="color:#33cc00;"></span></div><div><span style="color:#33cc00;">Now some helpful advice! I doubled the recipe to get nine, 1/2 pint jars. My first batch was made following the recipe and it only gave me 3 jars. Also remember there are 4 cups in a quart! You can chop your fruit as chunky or fine as you want. For me it seemed the finer the fruit the better it turned out. I just used 2 colanders when I strained the fruit, but you could also use a large seive. Lastly remember to stir this often so it doesn't scorch. I poured the birdseed into a large bowl added several big globs of peanut butter and let Gracie have at it with a wooden spoon. You can also add berries and nuts if you would like. I am lucky enough to have her green flour bowl that stayed in a bottom cabinet until it was biscuit making time. Although I don't slow down enough to make homemade biscuits I think I need to get my bowl out and put some flour in it. Just to see if it motivates me! Last week my son attended a cooking workshop for 4-H where they made biscuits. So no time like the present to have a little mother/son time in the kitchen. Here's the recipe:</span></div><div><span style="color:#ff6666;">2 cups white flour</span></div><div><span style="color:#ff6666;">2 1/2 tsp. baking powder</span></div><div><span style="color:#ff6666;">1/2 tsp. salt</span></div><div><span style="color:#ff6666;">1/2 cup shortening or lard</span></div><div><span style="color:#ff6666;">3/4 to 1 cup milk</span></div><div><span style="color:#ff6666;">Heat oven to 450 degrees; in a large bowl combine flour, baking powder, and salt; using two knives or a pastry blender, cut shortening into flour until consistency of course meal; add milk, stir with fork until mixture leaves sides of bowl and forms a soft, moist dough; on a floured surface, toss lightly until dough is no longer sticky; roll out 1/2 inch thick and cut with a floured cutter; place on ungreased cookie sheet or in a baking pan. Bake at 450 degrees for 8 to 12 minutes or until light golden brown. It always seems like the time between Christmas and warm weather lasts forever. So I couldn't wait to get outside this past weekend and get my hands dirty. My husband and I started making our raised beds last fall and have finally finished them. Needless to say I worked hard on Saturday getting some things planted in two of them. Here is what I have planted so far. Buttercrunch lettuce transplants, onion sets, shallot bulbs, mesculan, loose leaf lettuce mixture, spinach and green onions. I think I've checked on those beds about 50 times since Saturday! Sunday I also decided to start some of my seeds inside. I started Mammoth sunflower, Genovese Basil, Hibiscus, Italian Pepperoncini peppers, Pritchard's Scarlet Topper tomato, Kellog's Breakfast tomato and Dixie Golden Giant tomato. Yum! Fresh garden tomatoes with Basil and olive oil is the best. It's important to use seed staring mix and water from the bottom to try and prevent dampening off. After the seeds have sprouted take the plastic or dome cover off your container to prevent moisture building up and dripping on the seedlings. Here is a good tonic that I found in a Jerry Baker book.</span></div><div><span style="color:#3366ff;">Dampening-off Prevention Tonic:</span></div><div><span style="color:#3366ff;">4 tsp. chomomile tea</span></div><div><span style="color:#3366ff;">1 tsp. of liquid dish soap</span></div><div><span style="color:#3366ff;">Mix these ingredients in 1 quart of boiling water. Let steep for at least an hour (the stronger the better) , strain, then cool.
